Fat-Free Sweet Potato Fries and Homemade Ketchup

Ingredients

  • 1 large sweet potato
  • 2-3 tablespoons citric acid free tomato paste
  • 1 tablespoon maple syrup
  • 2 teaspoons oregano
  • Pinch of Himalayan salt (optional)
  • Red pepper flakes (optional)

Preparation

  1. Preheat oven to 375 degrees.

  2. Wash, peel, and cut a large sweet potato into steak fries.

  3. Lay out flat on a parchment-lined baking sheet.

  4. Bake for 25 minutes.

  5. Flip the fries and increase oven temperature to 400 degrees.

  6. Bake for another 20 minutes.

  7. Remove from oven and let cool slightly.

  8. For the ketchup, mix 2-3 tablespoons of citric acid-free tomato paste.

  9. Add 1 tablespoon of maple syrup to the ketchup mixture.

  10. Add 2 teaspoons of oregano to the ketchup.

  11. Add a pinch of Himalayan salt to the ketchup if desired (optional).

  12. Add red pepper flakes to the ketchup if desired (optional).

  13. Dip the fries in the ketchup and enjoy.
