Potato Wedges and Guacamole
Ingredients
Guacamole
- 5 ripe avocados
- Juice of half a lime
- 1 ripe tomato
- 1 small shallot or half if large
- 1/4 teaspoon salt
- Small handful of cilantro
- 1/16 teaspoon chili flakes or to taste
Potato wedges
- About 5 medium potatoes, washed if organic, peeled if not
- 1 tablespoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 tablespoon rosemary
Preparation
Guacamole
Mash the avocados on a plate.
Squeeze the lime juice over the mashed avocados and mix.
Cube the tomato and finely chop the shallot.
Combine all ingredients on the plate with salt, cilantro, and chili flakes.
Potato wedges
Cut the potatoes into wedges.
Add the wedges to a bowl with paprika, garlic powder, salt, and rosemary.
Mix everything together with wet clean hands.
Spread on a baking tray and bake for 45 minutes at 190°C.
