Protein Brownie Recipe

Ingredients

  • 300g black beans
  • 100g maple syrup
  • 30g coconut oil
  • 30g cocoa powder
  • 60g smart whey
  • 10g truvia sweetener
  • 1.5tbsp vanilla extract
  • 1tsp baking powder
  • 0.25tsp salt
  • 50g reeses pb chips
  • 50g chopped mini pb cups

Preparation

  1. Grease / Line an 8 brownie tin and put in the oven at 175C

  2. Drain and thoroughly rinse the black beans and add to a food processor with the maple syrup, the coconut oil and the vanilla extract and blend until smooth

  3. Add in the baking powder, the salt, the truvia and the cocoa powder and blend until smooth

  4. Slowly add in the whey whilst blending

  5. Mix in the majority of the PB chips

  6. Add the brownie mix to the pre-heated tin and top with the PB cups and remaining chips

  7. Place in oven for 20 minutes

  8. Allow to cool on a wire rack until room temperature then place in fridge overnight

  9. Cut into 10 bars and enjoy
