Raw Mint Slice
Ingredients
- 1 cup of rolled oats
- 1/2 cup of almonds
- 2 tablespoons of milk (i use soy)
- 1 tablespoon of chocolate protein powder (@petite_protein)
- 1 tablespoon of cacao powder
- 1 tsp of vanilla extract •
- peppermint layer:
- 2 cups of cashews, soaked in boiling water for 2 hours
- 1 and 3/4 tsp of peppermint extract (@queenfinefoods)
- 1 tablespoon of canned coconut cream
- 1 tablespoon of canned coconut milk
- 1 tablespoon of maple syrup •
- chocolate top:
- 2 tablespoons of cacao powder
- 1 tablespoon of rice malt syrup or maple syrup
- 2 tablespoon of canned coconut milk
- 2 tablespoons of melted coconut oil
Preparation
Blend the following ingredients until well combined
Blend all ingredients in a blender until well combined, then spread over the base and pop it back in the freezer
Mix all ingredients together in a bowl, and once combined, pour over the peppermint layer
Place in the freezer
I don’t even know how long you should let it set for tbh, but I reckon wait at least 2 hours before cutting
