Raw Mint Slice

Ingredients

  • 1 cup of rolled oats
  • 1/2 cup of almonds
  • 2 tablespoons of milk (i use soy)
  • 1 tablespoon of chocolate protein powder (@petite_protein)
  • 1 tablespoon of cacao powder
  • 1 tsp of vanilla extract •
  • peppermint layer:
  • 2 cups of cashews, soaked in boiling water for 2 hours
  • 1 and 3/4 tsp of peppermint extract (@queenfinefoods)
  • 1 tablespoon of canned coconut cream
  • 1 tablespoon of canned coconut milk
  • 1 tablespoon of maple syrup •
  • chocolate top:
  • 2 tablespoons of cacao powder
  • 1 tablespoon of rice malt syrup or maple syrup
  • 2 tablespoon of canned coconut milk
  • 2 tablespoons of melted coconut oil

Preparation

  1. Blend the following ingredients until well combined

  2. Blend all ingredients in a blender until well combined, then spread over the base and pop it back in the freezer

  3. Mix all ingredients together in a bowl, and once combined, pour over the peppermint layer

  4. Place in the freezer

  5. I don’t even know how long you should let it set for tbh, but I reckon wait at least 2 hours before cutting
