Simple Tex-Mex Frittata with Leftovers

Ingredients

  • 8 eggs
  • 1/2 to 3/4 cup cottage cheese (optional)
  • Leftover roasted vegetables
  • Potatoes
  • Leftover pork chops
  • Salsa
  • 5 teaspoons Balanced Bites Tex-Mex blend

Toppings

  • Sliced cherry tomatoes
  • Green onions

Preparation

  1. Gather and prepare leftovers, such as chopping vegetables and meat if necessary

  2. Sauté the vegetable and meat mixture with 2 teaspoons of Tex-Mex blend in a skillet

  3. In a bowl, whisk the eggs with cottage cheese and 3 teaspoons of Tex-Mex blend

  4. Pour the egg mixture over the sautéed ingredients in the skillet

  5. Top with sliced cherry tomatoes and green onions.

  6. Cook on the stovetop until the edges set, then finish under the broiler or in the oven until fully cooked
