Soup Tastes So Much Better with Bread
Ingredients
- 1 onion
- 1 pepper
- 1 butternut squash
- 2 sweet potatoes
- 3 garlic cloves
- 1 tsp chilli powder
- 1 heaped tsp turmeric
- 1 tsp mixed herbs
- 1 and 1/2 tsp cumin
- 1 tsp onion salt
- a good helping of black pepper
- 350ml water
- 1 stock cube
Preparation
Peel and roughly chop the veggies. Place on a baking tray and sprinkle with the herbs and spices
Roast in the oven for 25 mins on 180 degrees
Once cooked, add to a pan with the remaining ingredients and leave to simmer for a few minutes
Use a hand blender to blend the soup and serve
