Soup Tastes So Much Better with Bread

Ingredients

  • 1 onion
  • 1 pepper
  • 1 butternut squash
  • 2 sweet potatoes
  • 3 garlic cloves
  • 1 tsp chilli powder
  • 1 heaped tsp turmeric
  • 1 tsp mixed herbs
  • 1 and 1/2 tsp cumin
  • 1 tsp onion salt
  • a good helping of black pepper
  • 350ml water
  • 1 stock cube

Preparation

  1. Peel and roughly chop the veggies. Place on a baking tray and sprinkle with the herbs and spices

  2. Roast in the oven for 25 mins on 180 degrees

  3. Once cooked, add to a pan with the remaining ingredients and leave to simmer for a few minutes

  4. Use a hand blender to blend the soup and serve
