Summer Chia Pudding

Ingredients

  • 300 ml plant milk ( i used 1/2 almond and 1/2 coconut)
  • 4 tbsp raw chia seeds
  • 1 tsp açaí powder
  • 2 tbsp coconut yogurt
  • toppings: fresh figs, rose petals, puffed quinoa, coconut yogurt
  • combine the açaí powder with 2 tbsp of the milk and set aside.

Preparation

  1. Combine the açaí powder with 2 tbsp of the milk and set aside

  2. In a medium bowl, combine chia seeds and plant milk and whisk to combine. Add the açaí milk and stir to combine. Set aside for 20 minutes, whisking occasionally.Add sweetener of choice if you like

  3. Divide chia pudding and toppings between two jars and enjoy cold
