Cozy Pumpkin Chia Pudding

Ingredients

  • 3-4 tbsp chia seeds
  • 1 cup almond milk
  • 1/4 cup pumpkin purée
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • dash of nutmeg
  • 1 tbsp @reflexnutrition vanilla plant based protein

Toppings

  • baked pear
  • blueberries
  • @pipandnut almond butter
  • @troo_realfood granola

Preparation

  1. Warm milk in a pan, add chia seeds, pumpkin and spices and simmer on a low heat until starting to thicken.

  2. Stir in protein powder to thicken further and adjust milk to desired consistency.

  3. Add toppings such as baked pear, blueberries, almond butter and granola.
