Tofu Poke Bowl⁣

Ingredients

  • 1 14oz package of tofu⁣
  • 1/3 cup soy sauce ⁣
  • 1 tsp garlic⁣
  • 1 tsp red curry paste ⁣
  • juice from 1/2 a lime⁣
  • 1 tbsp maple syrup ⁣
  • 1 piece of ginger, peeled and minced (or 1.5 tsp ground)⁣
  • 1 tsp sesame of avocado oil (optional)⁣

Preparation

  1. Press and drain the tofu for at least 30 minutes. Then dice into 1” cubes. ⁣

  2. In a bowl, whisk all of the ingredients. ⁣

  3. Add the tofu and marinade to a Tupperware, cover with lid and give a gentle shake to coat all the pieces. Set aside to marinate for 30-60 mins, occasionally mixing.⁣

  4. To assemble the bowl, add a handful of mixed greens, 1/3 cup rice, red cabbage, carrots, cucumbers, avocado, pickled ginger and tofu. Sprinkle with sesame seeds, cilantro and green onions. Dress with extra marinade, soy sauce, peanut sauce, sriracha or spicy mayo (whatever your preference) and dig in! ⁣
