Vegan Lentil Burger with Veggies
Ingredients
- 1 can of drained and rinsed lentils
- 2 crushed garlic cloves
- 1 1/2 cups of whole meal bread crumbs
- 1 tablespoon of nutritional yeast
- 1 tablespoon of parsley
- 1 teaspoon of salt
- Pepper
- 1/2 cup cut spinach
- 1 tablespoon of olive oil
- 1 cup of grated carrots
- 1 cup of grated zucchini
- 1 cup of boiled rice
- 2 tablespoons of sunflower oil
Preparation
In a fry pan add the oil, 1 teaspoon of salt, pepper, garlic, parsley, basil, carrots, zucchini, lentils and sauté for 10 minutes.
Once mixture has cooled place it in a bowl and add the rice, nutritional yeast, breadcrumbs and combine.
Once combined shape into burgers, which should make around 6 burgers.
Refrigerate the burgers for 1 hour.
Then shallow fry the burgers.
