Vegan Lentil Burger with Veggies

Ingredients

  • 1 can of drained and rinsed lentils
  • 2 crushed garlic cloves
  • 1 1/2 cups of whole meal bread crumbs
  • 1 tablespoon of nutritional yeast
  • 1 tablespoon of parsley
  • 1 teaspoon of salt
  • Pepper
  • 1/2 cup cut spinach
  • 1 tablespoon of olive oil
  • 1 cup of grated carrots
  • 1 cup of grated zucchini
  • 1 cup of boiled rice
  • 2 tablespoons of sunflower oil

Preparation

  1. In a fry pan add the oil, 1 teaspoon of salt, pepper, garlic, parsley, basil, carrots, zucchini, lentils and sauté for 10 minutes.

  2. Once mixture has cooled place it in a bowl and add the rice, nutritional yeast, breadcrumbs and combine.

  3. Once combined shape into burgers, which should make around 6 burgers.

  4. Refrigerate the burgers for 1 hour.

  5. Then shallow fry the burgers.
