Vegan Soya Mince Bolognese

Ingredients

  • 150g soya mince
  • 1 red onion
  • 4 garlic cloves
  • 2 large carrots
  • 100g mushrooms
  • 2 tins of chopped tomatoes
  • 1 veg stock cube
  • 3 tbsp vegan worcester sauce
  • 1 tbsp tomato paste
  • 2 bay leaves
  • bunch of basil leaves
  • olive oil salt & pepper

Preparation

  1. Finely chop the onion & garlic

  2. Peel & chop carrots into little 1cm cubes, chop the mushrooms roughly the same

  3. In a large pot, heat oil & begin to fry onions for 5 mins then add the mushrooms

  4. Fry for another 5-7 mins and then add the carrots

  5. Fry for another 3-4 mins & then squeeze in the tomato paste & chuck in the soya chunks

  6. Stir it all together & then pour in the tomatoes

  7. Fill each tin with water twice and pour in

  8. Add in the bay leaves and worcester sauce

  9. Bring to a boil & let simmer for about 45 mins to get all yummy & delicious

  10. Add basil leaves before serving, have with your fave type of pasta
