Vegan Soya Mince Bolognese
Ingredients
- 150g soya mince
- 1 red onion
- 4 garlic cloves
- 2 large carrots
- 100g mushrooms
- 2 tins of chopped tomatoes
- 1 veg stock cube
- 3 tbsp vegan worcester sauce
- 1 tbsp tomato paste
- 2 bay leaves
- bunch of basil leaves
- olive oil salt & pepper
Preparation
Finely chop the onion & garlic
Peel & chop carrots into little 1cm cubes, chop the mushrooms roughly the same
In a large pot, heat oil & begin to fry onions for 5 mins then add the mushrooms
Fry for another 5-7 mins and then add the carrots
Fry for another 3-4 mins & then squeeze in the tomato paste & chuck in the soya chunks
Stir it all together & then pour in the tomatoes
Fill each tin with water twice and pour in
Add in the bay leaves and worcester sauce
Bring to a boil & let simmer for about 45 mins to get all yummy & delicious
Add basil leaves before serving, have with your fave type of pasta
