Spicy Almond Miso Chickpeas

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/2 cup sliced mushrooms
  • 1/2 small red onion, diced
  • 2-3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1 tsp garlic chili sauce
  • 1 tsp miso + 1/4 cup warm water
  • 1 tbsp low sodium soy sauce
  • 1 tbsp almond butter
  • 1/2 cup veggie broth or water

Preparation

  1. In a small bowl, add warm water and miso paste

  2. Mix together with a fork to make sure miso is dissolved

  3. In a pan, sauté onions and mushrooms until softened

  4. Add in garlic and ginger and sauté until fragrant

  5. Add chickpeas, soy sauce, garlic chili sauce, veggie broth, and sauce to fully combine

  6. Allow to simmer and add in almond butter and miso mixture

  7. Allow to thicken and absorb liquid
