Vegan Sticky Sesame Cauliflower with Rice

Ingredients

  • 1 small cauliflower
  • 1/3 cup flour
  • 1/3 cup water
  • Pinch of salt and pepper
  • Pinch of garlic powder and onion powder

Sauce

  • 1 clove garlic, finely chopped
  • 1 piece ginger, grated
  • 2 tablespoons brown sugar or maple syrup
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon toasted sesame oil
  • 1/2 cup vegetable stock
  • 1 teaspoon cornflour
  • 1 tablespoon water

Preparation

  1. Preheat the oven to 180°C

  2. Mix the batter ingredients with the cauliflower to coat it thoroughly.

  3. Place the coated cauliflower in the oven, spray with a little olive oil, and bake for 40 minutes or until golden.

  4. Mix all sauce ingredients together.

  5. Add the sauce mixture to a pan and bring to a boil.

  6. Add 1 teaspoon cornflour mixed with 1 tablespoon water to the sauce.

  7. Turn the heat down to low and cook until the sauce reaches desired thickness.

  8. Coat the baked cauliflower with the sauce.

  9. Serve and enjoy.
