Vegan Zucchini Lasagna with Nut Fillings

Ingredients

  • Walnuts
  • Cashews
  • Nutritional Yeast

Preparation

  1. Slice zucchini into thin layers to use as lasagna sheets

  2. Prepare walnut meat by grinding walnuts and mixing with cumin and other spices

  3. Make cashew cheese sauce by blending cashews with nutritional yeast and water until smooth

  4. Cook tomato garlic sauce using diced tomatoes, tomato sauce, garlic, basil, and oregano

  5. Layer the zucchini slices, walnut meat, cashew cheese sauce, and tomato garlic sauce in a baking dish

  6. Bake in a preheated oven at 180°C for 30-40 minutes or until heated through and bubbly
