Crunchy Sesame Shrimp Salad

Ingredients

  • 1 pack of coleslaw mix
  • 1 bunch of green onions, diced
  • 1/2 cup sunflower seeds
  • 1/2 cup almonds, roughly chopped
  • 1 avocado
  • 2 tbsp sesame seeds
  • 15-20 uncooked shrimp
  • 1 tsp smoked paprika

For the sauce

  • 1/4 cup avocado oil
  • 2 tbsp rice vinegar
  • 2 tbsp coconut aminos
  • 1/2 tsp sesame oil
  • 2 tsp coconut sugar
  • 1 tsp garlic powder
  • 1/2 tsp ginger
  • 1/4 tsp cayenne
  • Salt and pepper

Preparation

  1. Add almonds and sunflower seeds to a frying pan and toast for 5 minutes (keep an eye on them to prevent burning).

  2. Remove from heat and add a splash of oil. Pat dry the shrimp and season with salt, pepper, and smoked paprika. Fry for 3 minutes per side.

  3. Whisk together all the dressing ingredients.

  4. In a large bowl, combine the coleslaw mix, green onion, and toasted almonds/sunflower seeds. Toss with the dressing.

  5. Divide the salad into bowls and top with diced avocado, cooked shrimp, and sesame seeds.
