Crunchy Sesame Shrimp Salad
Ingredients
- 1 pack of coleslaw mix
- 1 bunch of green onions, diced
- 1/2 cup sunflower seeds
- 1/2 cup almonds, roughly chopped
- 1 avocado
- 2 tbsp sesame seeds
- 15-20 uncooked shrimp
- 1 tsp smoked paprika
For the sauce
- 1/4 cup avocado oil
- 2 tbsp rice vinegar
- 2 tbsp coconut aminos
- 1/2 tsp sesame oil
- 2 tsp coconut sugar
- 1 tsp garlic powder
- 1/2 tsp ginger
- 1/4 tsp cayenne
- Salt and pepper
Preparation
Add almonds and sunflower seeds to a frying pan and toast for 5 minutes (keep an eye on them to prevent burning).
Remove from heat and add a splash of oil. Pat dry the shrimp and season with salt, pepper, and smoked paprika. Fry for 3 minutes per side.
Whisk together all the dressing ingredients.
In a large bowl, combine the coleslaw mix, green onion, and toasted almonds/sunflower seeds. Toss with the dressing.
Divide the salad into bowls and top with diced avocado, cooked shrimp, and sesame seeds.
