Lemon Dill Mung Bean Rice

Ingredients

  • 1.5 cups basmati rice, soaked (@jayviq_organica)
  • 2 cups boiling water
  • 1 cup steamed mung beans (@jayviq_organica)
  • 2 cloves crushed garlic
  • 1 cup dill
  • 1/2 lemon, juiced
  • 1 tablespoon groundnut oil (@jayviq_organica)
  • 1/4 cup chopped onions
  • 5 curry leaves
  • 1 teaspoon black mustard seeds

Preparation

  1. Heat oil and add the mustard seeds and curry leaves.

  2. Once they start popping, add the onions and garlic. Mix until transparent.

  3. Add the rice and half of the dill. Mix for a few seconds.

  4. Add the water and cook on high heat.

  5. Once the water evaporates, lower the heat to a minimum and cook until done (about 10 minutes).

  6. Add the remaining dill and lemon juice. Turn off the heat and let it sit for 5 minutes.

  7. Serve and enjoy!
