Memorial Day Is Right Around the Corner

Ingredients

  • 1 large sweet potato chopped
  • Baby heirloom tomatoes halved
  • Baby Spinach
  • Coleslaw
  • For the beans
  • 1 1/4 cup of navy beans
  • 2 tbs of tomato paste
  • 1 tbs + 1 1/2 tsp of maple syrup
  • 1 tsp of molasses
  • 1 tsp of stone ground mustard
  • 1 tsp of white vinegar
  • 1/4 tsp of pink Himalayan salt
  • 1/4 tsp of pepper
  • 1/4 tsp of onion powder
  • For bacon
  • 3oz of sliced tempeh
  • 1 tbs of soy sauce
  • 1 tbs of maple syrup
  • 1/4 tsp of cumin
  • 1/4 tsp of paprika
  • Pinch of pink himalayan salt
  • Pinch of black pepper

Preparation

  1. Preheat oven to 425°, roll sweet potato pieces in a drizzle of olive oil and seasonings of choice(we used a bbq seasoning)

  2. Bake in oven for 45 minutes, flipping halfway through

  3. When potatoes are near done combine all ingredients for beans in a small pot over low heat and stir well

  4. Let simmer for 10 minutes

  5. Combine all ingredients for bacon in a bowl and stir well

  6. Allow to sit for few minutes then cook in a medium pan over medium heat for 4 minutes each side

  7. Once all components are ready layer jar starting with baked beans followed by tomatoes, sweet potato, spinach, coleslaw, and bacon

  8. Twist off with cap and enjoy
