Mint & Pineapple Sparkle
Ingredients
- 1 small pineapple
- 1 cup of tightly packed organic spinach, washed and drained
- 1/4 cup (small handful) of fresh mint leaves
- 1L bottle of sparkling water or club soda (I like San Pellegrino)
- Optional: a few tsp of your favourite low-FODMAP sweetener • Crushed ice to serve/blend
Preparation
Place the pineapple, mint, spinach, water and sweetener (if desired) in a high-speed blender and process until smooth
Pour into tall glasses and top with crushed ice, fresh pineapple slices or a few mint sprigs
