Our Veggie Rice Wraps with Creamy Cashew Basil Sauce
Ingredients
- rice wraps
- baby spinach
- julienne peeled carrots
- julienne peeled cucumber
- thinly sliced purple cabbage
- mung bean noodles
- for the sauce
- handful of basil
- 1/4 cup of cashew
- 1 tbs of lemon juice
- 1 clove of garlic
- 1 tsp of sesame oil
- 1/8 tsp of pepper
- 1/8 tsp of pink himalayan salt
- 1/4 cup of filtered water
Preparation
Soften rice papers and place veggies and noodles on one side fold sides in and roll gently
Repeat process until finished
Combine all ingredients excluding water for sauce into a pestle and mortar grind until sauce forms and water and stir well
Slice wraps in half and garnish with sliced scallions and black sesame seeds
