Oven-Baked Tacos with Corn, Black Beans, and Sweet Potato
Ingredients
- 1/2 cup corn kernels
- 1/2 cup black beans
- 1/2 cup cooked sweet potato
- 1/2 cup chopped coriander
- 1/2 cup grated cheese
- 6 corn tortillas
Preparation
In a bowl, combine the corn kernels, black beans, cooked sweet potato, and chopped coriander.
Place about 1 tablespoon of the filling mixture on each corn tortilla and fold them in half.
Sprinkle grated cheese on top of the folded tacos.
Preheat the oven to 180°C.
Arrange the tacos on a baking sheet and bake for 15 minutes or until they turn golden brown and become crisp.
Once baked, remove from the oven and serve immediately.
