Oven-Baked Tacos with Corn, Black Beans, and Sweet Potato

Ingredients

  • 1/2 cup corn kernels
  • 1/2 cup black beans
  • 1/2 cup cooked sweet potato
  • 1/2 cup chopped coriander
  • 1/2 cup grated cheese
  • 6 corn tortillas

Preparation

  1. In a bowl, combine the corn kernels, black beans, cooked sweet potato, and chopped coriander.

  2. Place about 1 tablespoon of the filling mixture on each corn tortilla and fold them in half.

  3. Sprinkle grated cheese on top of the folded tacos.

  4. Preheat the oven to 180°C.

  5. Arrange the tacos on a baking sheet and bake for 15 minutes or until they turn golden brown and become crisp.

  6. Once baked, remove from the oven and serve immediately.
