Raspberry Ripe Brownies
Ingredients
Base
- 1/2 cup Chocolate Protein Powder
- 1/3 cup Cacao Powder
- 1/4 cup Almond Butter
- 1/4 cup Rice Malt Syrup
Berry Layer
- 1 cup Frozen Raspberries
- 1/3 cup Shredded Coconut
- 1/4 cup Coconut Flour
- 1/4 cup Vanilla Protein
- 3 tbsp Rice Malt Syrup
- 1 tsp Unicorn Superfoods Antioxidant Powder
Ganache Top
- 100g Chocolate
- 2 tbsp Nut Butter
Preparation
Mix the base ingredients together to form a thick dough. Press the mixture into a lined tin and set it aside in the fridge.
Add the frozen raspberries to a bowl and microwave for 1 minute. Mash them with a fork.
Add the remaining ingredients for the berry layer and stir to combine. Spread this mixture on top of the base and return it to the fridge.
Melt the chocolate with the nut butter and pour it over the top of the berry layer.
Leave the brownies in the fridge for a couple of hours to set before slicing.
