Raw Vegan Armenian Salad
Ingredients
- 1 head cauliflower, cored, broken into florets
- 1 tsp of himalyan salt
- 1/2 cup of golden raisins and/or dried cranberries
- 1 cup of minced apricot
- 2/3 cup of sliced green onion
- 1/2 cup of fresh pomegranate
- fresh mint (few leaves broken into small pieces by hand)
- juice of fresh squeezed lemon or orange
- Optional: crushed pistachos (1/4th cup)
Preparation
Place cauliflower florets into a food processor
Pulse several times until the cauliflower looks like a coarse meal, resembling traditional rice
Mix all ingredients together and enjoy!
