Raw Vegan Armenian Salad


  • 1 head cauliflower, cored, broken into florets
  • 1 tsp of himalyan salt
  • 1/2 cup of golden raisins and/or dried cranberries
  • 1 cup of minced apricot
  • 2/3 cup of sliced green onion
  • 1/2 cup of fresh pomegranate
  • fresh mint (few leaves broken into small pieces by hand)
  • juice of fresh squeezed lemon or orange
  • Optional: crushed pistachos (1/4th cup)


  1. Place cauliflower florets into a food processor

  2. Pulse several times until the cauliflower looks like a coarse meal, resembling traditional rice

  3. Mix all ingredients together and enjoy!
