Homemade Strawberry Nectarine Popsicles with Coconut

Ingredients

  • 1/2 cup fresh coconut meat
  • 1/2 cup dates
  • 1/2 cup cashew nuts
  • 1/2 cup cashew milk
  • 1 cup strawberries
  • 1 nectarine
  • 1 tsp vanilla bean paste
  • Green and Black's dark cooking chocolate to cover (optional)

Preparation

  1. Soak dates and cashew nuts in boiling water; note that cold water is better but may not be planned ahead.

  2. Drain the soaked dates and cashew nuts.

  3. Blend all ingredients together in a high speed blender.

  4. Pour the mixture into ice lolly moulds and freeze.

  5. Optionally, to add chocolate: melt dark cooking chocolate in a bowl over a pan of hot water and spoon it over the unmolded lollies.
