Homemade Strawberry Nectarine Popsicles with Coconut
Ingredients
- 1/2 cup fresh coconut meat
- 1/2 cup dates
- 1/2 cup cashew nuts
- 1/2 cup cashew milk
- 1 cup strawberries
- 1 nectarine
- 1 tsp vanilla bean paste
- Green and Black's dark cooking chocolate to cover (optional)
Preparation
Soak dates and cashew nuts in boiling water; note that cold water is better but may not be planned ahead.
Drain the soaked dates and cashew nuts.
Blend all ingredients together in a high speed blender.
Pour the mixture into ice lolly moulds and freeze.
Optionally, to add chocolate: melt dark cooking chocolate in a bowl over a pan of hot water and spoon it over the unmolded lollies.
