Strawberry Nectarine Popsicles

Ingredients

  • 1/2 cup fresh coconut meat
  • 1/2 cup dates
  • 1/2 cup cashew nuts
  • 1/2 cup cashew milk
  • 1 cup strawberries
  • 1 nectarine
  • 1 tsp vanilla bean paste

Preparation

  1. Green and Black's dark cooking chocolate to cover (optional). I soaked my dates and cashew nuts in boiling water - cold water would have been better but I hadn't planned ahead! - then drained them and blended everything together in a high speed blender. Pour into ice lolly moulds and freeze

  2. To add chocolate simply melt some chocolate in a bowl over a pan of hot water and spoon it over the un-moulded lollies
