Baked Vegan Avocado Boats

Ingredients

  • 4 ripe avocados
  • 1/4 cup walnuts
  • 4 tbsp salsa
  • 1 tbsp vodka tomato sauce
  • Dollop of sour cream for each avocado
  • Sprinkle of Mexican cheese for each avocado

Preparation

  1. Preheat oven to 350 degrees

  2. Cut the avocado in half and remove the seed

  3. Scoop out some room in each half

  4. Place walnuts, salsa, and tomato sauce in a food processor for 10 seconds

  5. Place a little of the mixture in each avocado, followed by additional salsa and vegan cheese

  6. Place the avocado boats on a baking sheet and cook for 10 minutes. Be sure to watch for no browning

  7. Take out and let cool, then top with sour cream
