Bucatini and Meatballs
Ingredients
- ingredients for the parmesan
- 3/4 cup raw cashews
- 1/4 cup of nutritional yeast
- 1/2 tsp of pink salt
- directions
- ingredients for the tomato sauce
- 1/4 cup of olive oil
- 1/8 cup of garlic
- 1/2 tsp of dried oregano
- 3 cups of diced roma tomatoes
- 1/2 tsp of pink salt
- dash of black pepper
- 3 tbs of tomato paste
Preparation
Combine all ingredients into a blender and blend until a smooth consistency is formed. Set aside when finished
In a pot on medium heat add oil. Add garlic and oregano. Stir until fragrant and add tomatoes and seasonings. Allow sauce to simmer for 20 minutes
Add tomato paste and mix in well. Transfer sauce into a blender and blend until smooth
Serve sauce and parmesan with pasta or store in jars for later use. Great with subs, soups, and casseroles. •
