Caramel Toffee Chai Oatmeal

Ingredients

  • 2/3 cup jumbo oats
  • 1 small/medium grated and squeezed courgette
  • 1/3 cup almond milk
  • 2/3 cup stewed toffee chai tea
  • 1 tbsp maple syrup
  • 2 tsp sugar or sweetener
  • pinch of salt

Toppings

  • vegan caramel filled choc bar
  • fig
  • kiwi
  • vanilla coconut yogurt

Preparation

  1. In a saucepan, combine the jumbo oats, grated and squeezed courgette, almond milk, stewed toffee chai tea, maple syrup, sugar or sweetener, and salt.

  2. Cook over medium heat, stirring occasionally, until the oatmeal is thickened and creamy, about 5-10 minutes.

  3. Remove from heat and allow to cool slightly if desired.

  4. Add the toppings: vegan caramel filled chocolate bar, fig, kiwi, and vanilla coconut yogurt.
