Pumpkin Spiced Cauli Oats

Ingredients

  • 1/2 cup oats
  • 1/2 cup frozen cauli rice
  • Splash of almond milk
  • Pinch of salt
  • Cinnamon
  • 1 tsp pumpkin spiced almond butter
  • 1 egg white (optional)

Toppings

  • Frozen blueberries
  • Fig

Preparation

  1. Soak the 1/2 cup oats.

  2. Combine the soaked oats with 1/2 cup frozen cauli rice, a splash of almond milk, a pinch of salt, cinnamon, and 1 tsp pumpkin spiced almond butter in a bowl.

  3. If using, add 1 egg white and mix well to thicken.

  4. Top with frozen blueberries and fig.
