Acai Bramble Overnight Oats with Cashew Cream

Ingredients

  • 2 cups porridge oats
  • 2 cups oat milk
  • 2 tablespoons chia seeds
  • 1 tablespoon acai powder
  • 2 tablespoons agave syrup
  • 1/2 cup brambles

Cashew cream

  • 1/2 cup cashew nuts
  • small handful of almonds
  • 2 Medjool dates
  • 1/4 teaspoon vanilla bean paste

Preparation

  1. Soak the cashew nuts, almonds, and Medjool dates in enough water to cover overnight.

  2. Add 1/4 teaspoon vanilla bean paste to the soaked mixture and blend until smooth to prepare the cashew cream.

  3. Mix together the porridge oats, oat milk, chia seeds, acai powder, agave syrup, and brambles in a container.

  4. Refrigerate the oat mixture overnight.

  5. Serve the overnight oats topped with the cashew cream.
