Chia Seed Pudding with Spirulina and Fruits

Ingredients

  • 5 tbsp chia seeds
  • 1 cup almond milk
  • 1/2 cup coconut milk
  • 2 tsp maple syrup
  • 1 ripe avocado
  • 1 tsp SpiraVeg fresh spirulina
  • 1 ripe banana

Toppings

  • blueberries and coconut flakes

Preparation

  1. In a medium size bowl mix the chia seeds with plant-based milk and maple syrup. Set aside for 30 minutes until the chia seeds absorb the liquid.

  2. Meanwhile, add the avocado and banana to a food processor and pulse to combine. When smooth, add SpiraVeg fresh spirulina and stir to combine.

  3. Distribute the chia seed mixture into 4 serving bowls or jars, top with a layer of spirulina puree, garnish with coconut flakes and enjoy!
