Chickpea Mock Tuna Salad

Ingredients

  • 2 cups of cooked chickpeas, rinsed
  • 3 carrots peeled
  • 2 celery stalks
  • 1/4 red onion
  • 2 tbsp tahini
  • 1 tbsp mustard
  • 1 tsp apple cider vinegar or lemon juice
  • Salt & Pepper, to taste

Optional add-ins

  • 2 tbsp capers
  • cayenne pepper
  • dried dill
  • 2 tbsp nutritional yeast

Preparation

  1. In a food processor process each vegetable separately: carrots, celery and onion. Set aside in a medium size bowl.

  2. Add chickpeas, nutritional yeast, tahini, mustard apple cider vinegar or lemon juice into the food processor. Process but leave it a little chunky making sure it's not completely smooth.

  3. Add chickpea mixture to vegetables. Mix together, add in capers and mix again. Store in air tight container in the refrigerator.
