Chickpea Tuna Salad Jars
Ingredients
- 3 cups cooked chickpeas (or 2 cans, drained and rinsed)
- 2 Tablespoons vegan mayo
- 2 teaspoons Dijon mustard
- 1 rib celery, diced
- 1/4 small red onion, diced
- 1 carrot, diced
- 1/4 cup fresh dill, chopped
- Juice of 1/2 lemon
- 2 teaspoons kelp granules, optional
Preparation
Add all ingredients to a bowl and mash lightly. Enjoy!
