Colorful Rainbow Chia Pudding Breakfast

Ingredients

  • 2 tbsp chia seeds
  • 1 tbsp maple syrup (or other sweetener)
  • 120 ml plant based milk

Color additives

  • 1/2 tsp. blue spirulina
  • 1/4 tsp. green spirulina
  • 1/4 tsp. turmeric
  • 1/2 tsp. pitaya or beetroot powder
  • 1/4 tsp. blue spirulina + 1/4 tsp. pitaya powder
  • 1/2 tsp. cocoa powder
  • 1/4 tsp. charcoal

Preparation

  1. Mix all ingredients together and let it sit for at least 30 minutes to 1 hour or overnight until liquid is absorbed, stirring occasionally to avoid lumps.

  2. Blend 2 frozen bananas, a handful of frozen strawberries, and 50 ml plant-based milk to make strawberry nice cream.

  3. Top the chia pudding with the strawberry nice cream and enjoy.
