Easy Vegan Pizza Toasts

Ingredients

  • Sourdough bread
  • Veggie spread (e.g., Thai curry or cashew-roasted pepper)
  • Fresh tomatoes
  • Garlic olive oil (optional)
  • Leftover roasted vegetables
  • Onion
  • Vegan cheese
  • Dried rosemary

Preparation

  1. Toast the bread.

  2. Spread the veggie spread on the toast.

  3. For the tomato version, cut fresh tomatoes and place them on the bread, then optionally sprinkle with garlic olive oil.

  4. For the veggie version, saute leftover roasted vegetables with an onion in a pan.

  5. Add the chosen toppings to the bread.

  6. Sprinkle vegan cheese and dried rosemary on top.

  7. Bake in an air fryer or oven at 180°C/350°F for a few minutes until the cheese melts.
