Easy Vegan Pizza Muffins

Ingredients

  • 2 cups chickpea flour
  • 2/3 cup plant milk
  • 2 tsp baking powder
  • 1/2 cup chopped veggies of choice
  • 1 chopped onion
  • Vegan mozzarella
  • A few tbsp ketchup

Spices

  • salt
  • pepper
  • smoked paprika
  • garlic powder
  • herbs
  • nutritional yeast

Preparation

  1. Mix all the ingredients together except the mozzarella and ketchup and spoon it into muffin tins

  2. Put a piece of vegan mozzarella inside each muffin and top it with some ketchup

  3. Bake at 360F for about 20 minutes
