Gluten-Free Lemon Waffles with Quinoa

Ingredients

  • 1 cup tapioca flour
  • 1 cup quinoa flakes
  • 2 tablespoons shredded coconut
  • 2 eggs
  • 1/2 cup milk of choice
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • lemon zest
  • 1 tablespoon Stevia or 2 tablespoons any sugar

Toppings

  • 1 tablespoon 0% yogurt
  • 1 mini banana
  • chia seeds

Preparation

  1. Mix the dry ingredients with a fork.

  2. Gradually add the milk, eggs, and vanilla extract, mixing well until no lumps remain. Add milk little by little to avoid the batter becoming too liquid, as it may require adding more flour and result in lumpy waffles.

  3. Cook in a waffle iron or a skillet until done. Decorate with toppings as desired, such as yogurt, banana, and chia seeds.
