Light and Fluffy Lemon Cake
Ingredients
- 1 1/2 cups oat flour
- 5 tbsp butter, melted
- 3 eggs
- 1/3 cup honey
- Zest & juice from one large lemon
- 3/4 tsp baking powder
- 1/2 tsp vanilla extract
Glaze
- 1/4 cup coconut butter, melted
- 3 tbsp coconut oil, melted
- 1 tbsp honey
- 1 tsp lemon juice
- Lemon zest for topping
Preparation
Line an 8x8 pan with parchment paper and preheat oven to 350 degrees
Combine the flour and baking powder together. In a separate bowl, whisk egg yolks and set egg whites aside for later. Then whisk egg yolks and butter together, and add honey, lemon juice, lemon zest, vanilla extract and mix thoroughly
Add wet mixture into dry and combine until smooth. Fold in egg whites until well combined, but do not over-mix
Bake for 20-25 minutes
Whisk together icing. Let cake cool, top with icing and refrigerate until icing hardens
