Healthy Fluffy Lemon Cake
Ingredients
- 3 eggs
- 1/2 cup demerara sugar or xylitol
- 1/2 cup lemon juice + zest
- 1/2 cup plant-based milk or whole milk
- 3 tablespoons coconut oil
- 2 cups rice flour or oat flour
- 1/2 teaspoon xanthan gum (optional)
- 1 tablespoon baking powder
Topping
- 1 1/2 cups whole milk powder
- 1/2 cup hot water
- 1/2 cup demerara sugar or xylitol
- Juice of 1 lemon
Preparation
Grease a bundt pan and preheat the oven to 180 degrees Celsius
Beat the eggs with the demerara sugar or xylitol until foamy using a whisk or fork
Add the lemon juice and zest, milk, coconut oil, flour, and xanthan gum, and mix well
Add the baking powder and stir gently
Bake for 40 minutes
Topping
Blend the milk powder, hot water, and demerara sugar or xylitol in a blender for 2 minutes
Pour into a glass jar and add the lemon juice, then mix well
Pour over the cake
Tips
For other recipes, store the fake condensed milk in a glass jar in the refrigerator until thickened
