Chocolate Cake with Passion Fruit Mousse
Ingredients
Cake
- 1 cup cocoa powder
- 1 cup hot water
- 1 cup melted butter, coconut oil, or cooking oil
- 2 cups brown sugar
- 3 eggs, lightly beaten
- 2 cups all-purpose flour or oat flour
- 1 tablespoon baking powder
Passion fruit mousse
- 2 (14-ounce) cans sweetened condensed milk, or 2 batches homemade condensed milk
- 2 cups concentrated passion fruit juice
- 1 1/2 cups whole powdered milk
Preparation
Cake
Preheat oven to 180 degrees Celsius
In a bowl, combine cocoa powder and hot water; mix until smooth
Add melted butter or oil and mix
Add brown sugar and beaten eggs; mix until combined
Add flour and baking powder; mix until just combined
Grease a tube pan with butter and dust with cocoa powder
Pour the batter into the prepared pan
Bake for 40 minutes
Let the cake cool completely
Passion fruit mousse
In a blender, combine sweetened condensed milk, passion fruit juice, and powdered milk; blend for 4 minutes until smooth
Assembly
Pour the passion fruit mousse over the cooled cake
Refrigerate for at least 2 hours, or until set
