Chocolate Cake with Passion Fruit Mousse

Ingredients

Cake

  • 1 cup cocoa powder
  • 1 cup hot water
  • 1 cup melted butter, coconut oil, or cooking oil
  • 2 cups brown sugar
  • 3 eggs, lightly beaten
  • 2 cups all-purpose flour or oat flour
  • 1 tablespoon baking powder

Passion fruit mousse

  • 2 (14-ounce) cans sweetened condensed milk, or 2 batches homemade condensed milk
  • 2 cups concentrated passion fruit juice
  • 1 1/2 cups whole powdered milk

Preparation

Cake

  1. Preheat oven to 180 degrees Celsius

  2. In a bowl, combine cocoa powder and hot water; mix until smooth

  3. Add melted butter or oil and mix

  4. Add brown sugar and beaten eggs; mix until combined

  5. Add flour and baking powder; mix until just combined

  6. Grease a tube pan with butter and dust with cocoa powder

  7. Pour the batter into the prepared pan

  8. Bake for 40 minutes

  9. Let the cake cool completely

Passion fruit mousse

  1. In a blender, combine sweetened condensed milk, passion fruit juice, and powdered milk; blend for 4 minutes until smooth

Assembly

  1. Pour the passion fruit mousse over the cooled cake

  2. Refrigerate for at least 2 hours, or until set
