Passion Fruit Chocolate Brigadeiro Layer Cake
Ingredients
Cake
- 3 eggs
- 5 tablespoons melted butter
- 5 tablespoons packed brown sugar
- 1/2 cup whole or plant-based milk
- 3 tablespoons cocoa powder
- 1 1/2 cups oat flour
- 1 tablespoon baking powder
Passion fruit brigadeiro
- 1 recipe fake condensed milk
- 1 tablespoon butter
- 4 tablespoons packed passion fruit concentrate (or pulp without seeds)
- 3 tablespoons heavy cream
Chocolate brigadeiro
- 1 recipe fake condensed milk
- 2 tablespoons cocoa powder
- 2 tablespoons butter or coconut oil
Preparation
Cake
Blend all liquid ingredients in a blender for about 3 minutes
Add dry ingredients except baking powder and blend until combined
Add baking powder and mix again
Grease a pan with butter and cocoa powder and pour in the batter
Bake in a preheated oven for approximately 25 minutes
Passion fruit brigadeiro
Mix passion fruit brigadeiro ingredients in a saucepan over low heat until mixture pulls away from the bottom of the pan
Add heavy cream and mix
Let cool on a plate
Chocolate brigadeiro
Mix chocolate brigadeiro ingredients in a saucepan over low heat for about 10 minutes
Let cool on a plate
Assembly
Cut cake into two equal layers
Fill with passion fruit brigadeiro
Place top cake layer on filling
Cover cake with chocolate brigadeiro
