Easter Triple Chocolate Layer Cake
Ingredients
Batter
- 4 eggs
- 2 cups sugar
- 2 cups all-purpose flour
- 5 tablespoons unsweetened cocoa powder
- 1 cup water
- 1/2 cup vegetable oil
- 1 tablespoon baking powder
- Vegetable oil, for greasing
- All-purpose flour, for flouring
Filling
- 2 cups sweetened condensed milk
- 3 tablespoons unsweetened cocoa powder
- 1 tablespoon butter
- 1 cup heavy cream
- 1/2 cup orange juice
Topping
- 500 grams bittersweet chocolate, chopped
- 1 cup heavy cream
- 1 tablespoon brandy
- Chocolate sprinkles, for decoration
Preparation
Beat eggs and sugar in a mixer until pale and light
Without stopping, gradually add flour and cocoa powder
Add water and oil and beat until homogeneous
Add baking powder and mix gently
Pour into a greased and floured pan and bake in a preheated oven (200Β°C) for about 20 minutes
While the cake bakes, prepare the filling
In a saucepan, combine sweetened condensed milk, cocoa powder, and butter. Cook over medium heat, stirring constantly, until the mixture thickens and the bottom of the pan becomes visible
Remove from heat, add heavy cream, and mix well
Set aside
For the topping, melt bittersweet chocolate in a double boiler
Add heavy cream and brandy, and mix until homogeneous
After the cake cools, unmold it and cut it in half
Moisten both halves with orange juice
Spread the filling on one half of the cake
Cover with the other half
Cover the entire cake with the topping
Decorate with chocolate sprinkles and refrigerate for one hour
