Honey yogurt pillow cookies with rose nectar frosting
Ingredients
- 2 1/2 cups almond flour
- 1/4 cup coconut flour
- 3 eggs
- 6 tbsp butter (or coconut oil), melted
- 1/2 cup honey
- 1/2 cup greek yogurt
- 2 tsp vanilla extract
- 2.5 tsp baking powder
Frosting
- 1/3 cup coconut butter, melted
- 1/3 cup coconut cream
- 1 tbsp @drinkpurerose rose nectar
- 1 tbsp honey
- 2 tsp beet root powder
Preparation
Whisk together eggs and honey. Add yogurt, butter and vanilla extract and mix until smooth. In a separate bowl, combine flours and baking powder.
Slowly add wet ingredients to dry and mix until smooth. Refrigerate covered for 1 hour.
Preheat oven to 350 degrees F and line a baking sheet with parchment paper. Using an ice cream scoop, make 16 cookies and leave space in between because they do spread a bit.
Bake for 14-16 minutes, or until edges start to become slightly golden.
While baking, whisk together glaze until it becomes frosting-like.
Let cookies cool, add glaze drizzle, refrigerate until hardens and enjoy.
