Honey yogurt pillow cookies with rose nectar frosting

Ingredients

  • 2 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 3 eggs
  • 6 tbsp butter (or coconut oil), melted
  • 1/2 cup honey
  • 1/2 cup greek yogurt
  • 2 tsp vanilla extract
  • 2.5 tsp baking powder

Frosting

  • 1/3 cup coconut butter, melted
  • 1/3 cup coconut cream
  • 1 tbsp @drinkpurerose rose nectar
  • 1 tbsp honey
  • 2 tsp beet root powder

Preparation

  1. Whisk together eggs and honey. Add yogurt, butter and vanilla extract and mix until smooth. In a separate bowl, combine flours and baking powder.

  2. Slowly add wet ingredients to dry and mix until smooth. Refrigerate covered for 1 hour.

  3. Preheat oven to 350 degrees F and line a baking sheet with parchment paper. Using an ice cream scoop, make 16 cookies and leave space in between because they do spread a bit.

  4. Bake for 14-16 minutes, or until edges start to become slightly golden.

  5. While baking, whisk together glaze until it becomes frosting-like.

  6. Let cookies cool, add glaze drizzle, refrigerate until hardens and enjoy.
