Coffee Chocolate Chunk Cookies
Ingredients
- 2 cups oat flour
- 1/2 cup butter (melted)
- 2 eggs
- 2/3 cup purecane baking sweetener
- 1/4 cup instant coffee
- 2 tsp vanilla extract
- 1 1/2 tsp baking powder
- dash of sea salt
- 1 cup chocolate chunks
Preparation
Whisk together melted butter and instant coffee. Add eggs, purecane, and vanilla extract and mix until smooth. You can use an electric mixer or mix by hand.
Mix together oat flour, baking powder, and salt. Add dry ingredients to wet mixture and mix until well combined. Fold in chocolate chunks.
Refrigerate for 30 minutes. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
Using an ice cream scoop, form 8-9 cookies. The batter should make 16-18 cookies, so you may need to bake in batches. Sprinkle with sea salt and bake for 8-10 minutes.
