Healthy Paleo Muffins with Sweet Potato

Ingredients

  • 1 medium or small sweet potato
  • 1/4 cup tapioca flour
  • 1/4 cup shredded coconut or coconut flour
  • 1 tablespoon date paste (optional)
  • 2 eggs
  • Maple syrup or stevia to sweeten
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil

Preparation

  1. Wash, peel, and cut the sweet potato into small cubes. Process it in a food processor without cooking.

  2. Add the eggs and all other ingredients to the food processor and blend until well integrated.

  3. Using a spoon, transfer the mixture to muffin molds.

  4. Bake in a preheated oven at 190 degrees Celsius for 35 minutes. If your oven has low power, bake for 40 minutes.
