Healthy Paleo Muffins with Sweet Potato
Ingredients
- 1 medium or small sweet potato
- 1/4 cup tapioca flour
- 1/4 cup shredded coconut or coconut flour
- 1 tablespoon date paste (optional)
- 2 eggs
- Maple syrup or stevia to sweeten
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 tablespoon coconut oil
Preparation
Wash, peel, and cut the sweet potato into small cubes. Process it in a food processor without cooking.
Add the eggs and all other ingredients to the food processor and blend until well integrated.
Using a spoon, transfer the mixture to muffin molds.
Bake in a preheated oven at 190 degrees Celsius for 35 minutes. If your oven has low power, bake for 40 minutes.
