Healthy Banana Pancakes for Paleo Breakfast
Ingredients
- 1 cup almond flour
- 1/2 cup tapioca or arrowroot starch
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1/4 cup coconut oil, melted
- 1 green-tipped banana
- 1/4 cup almond/coconut milk
- 1 teaspoon lemon juice
Preparation
Preheat waffle maker
Place all ingredients in blender and blend on high until smooth
Cook 1/4 cup batter in the waffle maker at a time
Top with almond butter, banana slices, cinnamon, butter or ghee, or coconut whipped cream
