Homemade Summer Rolls with Fresh Vegetables

Ingredients

  • Vietnamese rice paper wrappers
  • rice noodles
  • smoked tofu
  • peppers
  • carrots
  • red cabbage
  • beansprouts
  • enoki and brown bunashime mushrooms
  • onions
  • parsley
  • pea shoots
  • edamame beans

Dipping sauce

  • peanut butter
  • agave
  • soy sauce
  • water

Preparation

  1. Stir fry the onion and mushrooms briefly.

  2. Soak the rice paper wrappers in warm water for about 10 seconds until soft.

  3. Mix peanut butter, agave, soy sauce, and water to make the dipping sauce.
