Sourdough Discard Granola

Ingredients

  • 4 oz 100% hydration fresh discard
  • 1 oz water
  • 2 oz brown sugar
  • 1 oz AP flour
  • 2 tsp vanilla
  • 0.5 oz each of honey and maple syrup
  • 1.5 oz vegetable oil
  • 5.5 oz rolled oats
  • 2 oz unsalted slivered almonds
  • 1 oz unsweetened shredded coconuts
  • 1/2 tsp sea salt

Preparation

  1. Mix together 4 oz 100% hydration fresh discard, 1 oz water, 2 oz brown sugar, 1 oz AP flour

  2. Let it sit for a few hours

  3. It'll turn syrupy

  4. To the syrupy discard, add in 2 tsp vanilla, 0

  5. Oz each of honey and maple syrup, 1

  6. Oz vegetable oil

  7. In another bowl, mix together 5

  8. Oz rolled oats, 2 oz unsalted slivered almonds, 1 oz unsweetened shredded coconuts, 1/2 tsp sea salt

  9. Pour in the syrupy discard mixture and combine

  10. Spread the mixture on a parchment lined baking sheet and baked in 300F for 30-40 mins without stirring

  11. Start checking after 30mins, mine was done at 35mins

  12. Remove and let cool

  13. Don't mix it

  14. Once cooled, the granola will be clumped together with a thin layer of brittle like bottom

  15. Break off pieces to the size you want
