Steel Cut Overnight Oats

Ingredients

  • 2 cups water
  • 2 cups unsweetened almond milk
  • 1 cinnamon stick
  • 1/2 tsp ground cardamom
  • 1/4 tsp kosher salt
  • 1-2 tbsp maple syrup (optional)
  • 1 cup steel cut oats

Preparation

  1. In a saucepan, combine all the ingredients except the steel cut oats. Mix well and bring to a boil.

  2. Add the steel cut oats to the boiling mixture. Boil and stir for 1 minute.

  3. Remove the saucepan from the stove and cover with a lid. Allow the mixture to cool before placing it in the fridge. Alternatively, you can portion the mixture into jars or containers to cool faster before refrigerating for at least 8 hours.

  4. When you wake up, your oats will have thickened and be ready to enjoy.

  5. Keep any leftovers in the fridge for up to 4-5 days.
