Toasted Bread, Sundried Tomato Hummus, Veggies, Avo and Tomato Relish

Ingredients

  • Sweat 2 cloves of garlic and 1/2 a brown onion in a pan with olive oil and add 2 cups of vine-ripe tomatoes 1/2 a cup of red wine vinegar and 1/2 tsp of dried oregano

Preparation

  1. Sweat 2 cloves of garlic and 1/2 a brown onion in a pan with olive oil and add 2 cups of vine-ripe tomatoes 1/2 a cup of red wine vinegar and 1/2 tsp of dried oregano , cook this mixture and reduce it until slightly thick , now add 2-3 tbsps of coconut sugar , 1/2 a tsp Dijon mustard , and a pinch of salt

  2. Cook a little more and let it cool and store it in the fridge in a air tight container

  3. Keeps well for 5-7 days
