Simple Tomato Relish with Herbs
Ingredients
- 2 cloves garlic
- 1/2 brown onion
- olive oil
- 2 cups vine-ripe tomatoes
- 1/2 cup red wine vinegar
- 1/2 teaspoon dried oregano
- 2-3 tablespoons coconut sugar
- 1/2 teaspoon Dijon mustard
- pinch of salt
Preparation
Sweat 2 cloves of garlic and 1/2 a brown onion in a pan with olive oil.
Add 2 cups of vine-ripe tomatoes, 1/2 cup of red wine vinegar, and 1/2 teaspoon of dried oregano.
Cook the mixture and reduce it until slightly thick.
Add 2-3 tablespoons of coconut sugar, 1/2 teaspoon of Dijon mustard, and a pinch of salt.
Cook a little more.
Let it cool and store in the fridge in an airtight container.
