Simple Tomato Relish with Herbs

Ingredients

  • 2 cloves garlic
  • 1/2 brown onion
  • olive oil
  • 2 cups vine-ripe tomatoes
  • 1/2 cup red wine vinegar
  • 1/2 teaspoon dried oregano
  • 2-3 tablespoons coconut sugar
  • 1/2 teaspoon Dijon mustard
  • pinch of salt

Preparation

  1. Sweat 2 cloves of garlic and 1/2 a brown onion in a pan with olive oil.

  2. Add 2 cups of vine-ripe tomatoes, 1/2 cup of red wine vinegar, and 1/2 teaspoon of dried oregano.

  3. Cook the mixture and reduce it until slightly thick.

  4. Add 2-3 tablespoons of coconut sugar, 1/2 teaspoon of Dijon mustard, and a pinch of salt.

  5. Cook a little more.

  6. Let it cool and store in the fridge in an airtight container.
