Vegan Avocado Boats

Ingredients

  • 4 riped avocados
  • 1/4 cup of walnuts
  • 4 tbsp of @fronteracocina salsa
  • 1 tbsp of @jargoods vodka tomato sauce
  • dollop of @wayfare_foods sour cream for each avocado
  • sprinkle of @daiya mexican cheese for each avocado

Preparation

  1. Preheat oven to 350 degrees

  2. Cut your avocado in half and remove seed

  3. Scoop out some room in each half

  4. Place walnuts, salsa, and tomato sauce in food processor for 10 seconds

  5. Place little of mix in each avocado, followed by additional salsa and vegan cheese

  6. Place avocado boats on baking sheet and cook for 10 minutes

  7. Be sure to watch for no browning)

  8. Lastly, take out and let cool and top with sour cream

  9. Enjoy!!
