Vegan Chia Jam and Peanut Butter Roly Poly Bake

Ingredients

  • 3 slices of bread
  • 10g peanut butter
  • 100ml almond milk
  • 10g vanilla soy isolate
  • 10g chickpea flour

Chia jam components

  • 100g frozen berries
  • 5g chia seeds
  • 10ml water

Preparation

  1. Boil the berries with the water and chia seeds in a pot until the berries lose their shape and the chia seeds soak up the water to form a jammy texture, then leave to cool.

  2. Roll out the slices of bread with a rolling pin to make them thinner.

  3. Spread the peanut butter and the cooled chia jam on top of the bread.

  4. Roll each piece lengthways and cut into small circles.

  5. If there is leftover jam, place that portion at the bottom of the baking dish.

  6. Place the circles in a baking dish and set aside.

  7. Mix the almond milk, vanilla soy isolate, and chickpea flour together.

  8. Pour the mixture over the circles in the baking dish.

  9. Bake in the oven at 200°C for 20 minutes.

  10. Optionally, top with additional powdered peanut butter, cacao nibs, and strawberries.
